RICHMOND, BC (October 13, 2026) – Wonton Mama, the Hong Kong-inspired street food pop-up created by MAMAintheKitchen and Chef Will Lew, returns to Fairmont Vancouver Airport on October 24, 2026, for a limited-time residency featuring authentic cuisine, cultural storytelling, and community collaboration. Celebrating the flavours and heritage of Hong Kong through a distinctly West Coast and Chinese Canadian lens, the immersive dining experience invites guests to explore the connections between food, memory, and identity.
Wonton Mama will offer dinner service four nights a week, from Thursday through Sunday, from 4:00 p.m. to 10:00 p.m..
Rooted in the belief that food preserves heritage and shared experiences, Wonton Mama combines local ingredients with family-inspired recipes that reflect the evolution of Chinese Canadian cuisine. Inspired by the vibrant noodle shops, cafés, and hawker-style eateries of Hong Kong, the pop-up offers a nostalgic yet contemporary dining experience for travellers, locals, and hotel guests alike.
For the first time, Wonton Mama is partnering with the Chinese Canadian Museum to present CCM: The Gallery Lounge, a specially curated cultural space featuring selected moments from the Museum’s past exhibitions. Bringing together art, historical artifacts, and visual storytelling, the installation offers guests a glimpse into Chinese Canadian history, creativity, and cultural identity, celebrating the stories and experiences that connect generations and communities. For the duration of the activation, $1 of every order will be donated to the Chinese Canadian Museum.
“Airports are places of international crossings, where people, cultures, and stories meet. We’re delighted to bring the Chinese Canadian Museum beyond Chinatown through this collaboration with Wonton Mama and Fairmont Vancouver Airport. By sharing curated moments from our past exhibitions, we hope to introduce travellers from around the world to the rich histories and creativity of Chinese Canadian communities,” says Dr. Melissa Karmen Lee, CEO of the Chinese Canadian Museum.
The culinary experience will feature hand-crafted wontons and noodles prepared fresh daily, alongside dim sum, Chinese barbecue, shareable snacks, and cocktails inspired by Vancouver’s historic Chinatown. Guests can also enjoy a signature collaboration donut created in partnership with Lee’s Donuts, available exclusively during the pop-up.
“Food has the ability to connect people to family, heritage, and shared memories. I’ve always believed that Taste = Memory, ” says Sharon Chan, Chef and Founder of MAMAintheKitchen. “With our Wonton Mama team, we hope to create a place where you can experience those memories through food and make new ones together. Each dish tells a story and creates an experience that nourishes both our guests and our community.”
“At Fairmont Vancouver Airport, we’re committed to creating experiences that reflect the diversity and character of our region,” says Rudolf Heider, General Manager of Fairmont Vancouver Airport. “Wonton Mama transforms our hotel into an immersive celebration of Hong Kong street food culture, bringing together exceptional cuisine, storytelling, and community. We’re thrilled to welcome Chef Sharon and the MAMAintheKitchen team back for a second season and provide a place where travellers, guests, and locals can connect through food.”
Limited-edition merchandise, including tote bags and t-shirts, will be available for purchase on-site. Guests who spend a minimum of $50 will also be eligible for complimentary parking vouchers.
“Culinary heritage connects the past, present and future. The past begins with my grandfather, Rick Lew, who immigrated from Hong Kong in 1956 and worked as a chef at two well-known restaurants in Vancouver Chinatown, Ho Ho and Ho Inn, in the 1960s,” says Chef Will Lew. “My family history is such a meaningful part of what we’re bringing to Wonton Mama and the community.”
Wonton Mama is open to locals, travellers, and hotel guests alike. Reservations are encouraged and can be made online at: Wonton Mama
